{"id":10504,"date":"2019-11-10T17:53:02","date_gmt":"2019-11-10T14:53:02","guid":{"rendered":"http:\/\/www.saranghanguk.ro\/?p=10504"},"modified":"2019-11-10T17:53:02","modified_gmt":"2019-11-10T14:53:02","slug":"kimchi-traditional-reteta","status":"publish","type":"post","link":"https:\/\/www.saranghanguk.ro\/index.php\/2019\/11\/10\/kimchi-traditional-reteta\/","title":{"rendered":"Kimchi tradi\u021bional &#8211; re\u021bet\u0103"},"content":{"rendered":"<p><strong>Ingrediente:<\/strong><\/p>\n<ul>\n<li>5 kg vaz\u0103 chinezeasc\u0103 (napa);<\/li>\n<li>o ridichie alb\u0103 &#8211; chinezeasc\u0103 (aproximativ 500 g);<\/li>\n<li>2 morcovi;<\/li>\n<li>2 pere coapte bine;<\/li>\n<li>4 leg\u0103turi ceap\u0103 verde;<\/li>\n<li>2 cepe galbene medii;<\/li>\n<li>40 c\u0103\u021bei de usturoi;<\/li>\n<li>ghimbir proasp\u0103t (aproximativ 50g)<\/li>\n<li>4 c\u0103ni ap\u0103;<\/li>\n<li>4 linguri f\u0103in\u0103 de orez glutinos (de mochi);<\/li>\n<li>4 linguri zah\u0103r;<\/li>\n<li>4 c\u0103ni fulgi de ardei iute\u00a0gochugaru (fulgi, nu pudr\u0103);<\/li>\n<li>1 can\u0103 sos de an\u0219oa coreean;<\/li>\n<li>o jum\u0103tate can\u0103 mini creve\u021bi s\u0103ra\u021bi;<\/li>\n<li>sare mare de mur\u0103turi.<\/li>\n<\/ul>\n<p>Pentru m\u0103sur\u0103tori am folosit o can\u0103 de 150 ml \u0219i o lingur\u0103 normal\u0103 de ciorb\u0103.<\/p>\n<p><strong>Metod\u0103:<\/strong><\/p>\n<p>Varza se despic\u0103 \u00een patru pe toat\u0103 lungimea \u0219i se trece prin ap\u0103 rece. Se s\u0103reaz\u0103 fiecare frunz\u0103 (insista\u021bi spre cotor) \u0219i se aseaz\u0103 \u00eentr-un lighean timp de 4 &#8211; 6 ore. Varza trebuie \u00eentoars\u0103 la fiecare or\u0103. Dup\u0103 ce trec ce le 4-6 ore, varza se spal\u0103 de 3 ori \u00een ap\u0103 rece \u0219i se las\u0103 la scurs 30 de minute.<\/p>\n<p>\u00centre timp (p\u00e2n\u0103 se s\u0103reaz\u0103 varza) preg\u0103ti\u021bi sosul.<\/p>\n<p>Pune\u021bi \u00eentr-o crati\u021b\u0103 cu fundul gros, cele 4 c\u0103ni de apa \u0219i 4 linguri de f\u0103in\u0103 de orez glutinos \u0219i porni\u021bi focul. Mesteca\u021bi \u00eencontinuu p\u00e2n\u0103 \u00eencepe s\u0103 fiarb\u0103 \u0219i s\u0103 se \u00eengroa\u0219e. Ad\u0103uga\u021bi cele 4 linguri de zah\u0103r, mai fierbe\u021bi un minut \u0219i stinge\u021bi focul. Lasa\u021bi s\u0103 se r\u0103ceasc\u0103 complet. Sosul trebuie s\u0103 fie gros, legat dar s\u0103 curg\u0103 din lingur\u0103.<\/p>\n<p>Felia\u021bi julienne ridichiea \u0219i morcovul. Ceapa verde t\u0103ia\u021bi-o bastona\u0219e de 3-4 cm.<\/p>\n<p>\u00centr-un blender mixa\u021bi: ceapa galben\u0103, usturoiul, ghimbirul \u0219i perele.<\/p>\n<p>R\u0103sturna\u021bi con\u021binutul din blender \u00eentr-un lighean \u0219i amesteca\u021bi bine cu sosul de f\u0103in\u0103 (r\u0103cit complet), fulgii de ardei iute, sosul de an\u0219oa, creve\u021bii \u0219i legumele feliate. Sosul pentru kimchi este gata.<\/p>\n<p>Dup\u0103 ce varza s-a scurs, \u00eentinde\u021bi sos pe fiecare frunz\u0103 (insist\u00e2nd la cotor) \u0219i pune\u021bi verzele \u00een recipientul unde vor fermenta (care a fost dezinfectat \u00eenainte). Frunzele de varz\u0103 trebuie s\u0103 fie complet acoperite cu sos. Tineti recipientul la temperatura camerei timp de 2 zile (ar trebui s\u0103 fac\u0103 bule \u00eenc\u0103 din prima zi). Dup\u0103 cele 2 zile pute\u021bi transfera recipientul la frigider sau puteti transfera con\u021binutul \u00een recipiente mai mici pe care le b\u0103ga\u021bi la frigider. Kimchi se poate consuma imediat. Dac\u0103 v\u0103 place gustul acru, atunci l\u0103sa\u021bi-l la frigider cel pu\u021bin 10 zile. Kimchi continu\u0103 s\u0103 fermenteze \u0219i la frigider, \u00eens\u0103 mai \u00eencet.<\/p>\n<p>&nbsp;<\/p>\n<p>Sfaturi:<\/p>\n<ul>\n<li>alege\u021bi varz\u0103 de calitate, f\u0103r\u0103 pete, partea alb\u0103 (spre cotor) trebuie s\u0103 fie lucioas\u0103 \u0219i frunzele c\u00e2t mai verzi (spre v\u00e2rf);<\/li>\n<li>am g\u0103sit varz\u0103 chinezeasc\u0103 \u0219i ridichie alb\u0103 la Kaufland \u0219i la Carrefour;<\/li>\n<li>toate ingredientele \u201dexotice\u201d (sosul de an\u0219oa, creve\u021bii, fulgii de ardei iute gochugaru \u0219i f\u0103ina de orez glutinos) pot fi achizi\u021bionate de la magazinele coreene din \u021bar\u0103;<\/li>\n<li>fulgii de ardei gochugaru trebuie s\u0103 fie mari (nu pudr\u0103 &#8211; poza mai jos)<\/li>\n<li>recipientele folosite
